So I saw this amazing vegan gluten-free coconut bars recipe on Chocolate Covered Katie's blog that I just knew I had to try out. It looked so simple and I love coconut, so it seemed like a good fit for a quick but awesome no bake treat. As I was reading through the comments on her blog, I noticed one person comment on how they used to have a similar dessert as a child, only it was made with condensed milk. I just finished a batch of vegan sweetened condensed milk, so I decided to give it a go with my own spin on it. The result? Absolutely amazing addictive stuff!
Vegan Gluten-Free Coconut Bars
Adapted from Chocolate Covered Katie
Ingredients:
2 cups finely shredded coconut
1 cup vegan sweetened condensed milk (see recipe here)
2 tablespoon coconut flour
2 tablespoon coconut oil
Directions:
1. Place all ingredients in a blender and process until combined.
2. Transfer mixture into a parchment paper-lined medium sized container (I used a tupperware dish that's 7x8"). Cover with another layer of parchment paper and press mixture down well using hands or a flat bottomed object. Remove and discard top parchment layer.
3. Freeze for at least 30 mins (or longer). Then remove from freezer and transfer contents onto a cutting board and cut into bars. Store in the fridge.

I have an allery to milk. Is there a replacement for the condensed milk that I could use?

No worries. I'm with you -- none of my recipes use dairy milk. There is a link next to the condensed milk for a dairy-free condensed milk recipe.
