Sometimes weird things happen in my kitchen. Like thinking super bite-sized ice cream, for instance, is a good idea... :P Totally hooked!
These little raw ice cream bites are so simple to put together --> just blend and freeze, and soon you'll have an arsenal of delicious little ice cream candies to pull you through the week. The result literally tastes just like ice cream -- not icy, just melty sweet, creamy goodness ♡
Plus it's a good way to use up leftover coconut milk if you ever work with a recipe that only calls for so much and leaves you with half a can of coconut milk to do something with. And of course, besides salvaging leftover milk, I love that you can have "ice cream" this way, without all the churning, cooking, and without having to commit to a whole tub in the freezer...
Quick note: for this recipe I used a coconut milk that had some guar gum in it. I recommend giving that a try, though if you can't find it it's ok. The extra guar gum in the coconut milk just helps these bites not to be "icy". Also, be sure to use room temp coconut milk, and give it a shake before you pour.

Ingredients
- ½ cup full fat coconut milk
- ¼ cup maple syrup
- ½ tsp raw ground vanilla bean
- ¼ tsp almond extract
- ⅛ tsp salt
Instructions
- Blend all ingredients in a high speed blender to combine.
- Place candy molds on a metal tray. Pour the mixture into the molds.
- Freeze overnight. Enjoy! (Keep them frozen until ready to eat -- they melt quickly, just like ice cream would).

Hi Marion, sorry about the link -- looks like the candy molds shape I was using specifically got all sold out. I just replaced the link with something similar (though there are lots of other shapes on Amazon as well).
About the vanilla, you can use a tsp of pure vanilla extract. The raw ground vanilla adds a bit of a deeper flavor, but regular extract will work just fine too.

All ingredients I am currently obsessed with--these must be amazing! And who doesn't want spoon-free bites of ice cream in their freezer for random walk-by-and-grab-one snack situations :) I've been using canned coconut milk for almost all my non-dairy milk needs lately, so I actually run into that half-empty can of coconut milk problem quite often. I am loving all these little sweet easy treats to use up leftovers lately :D

I know all about that half can coconut milk issue all too well as well :) -- especially since my husband doesn't like it, so if I use it it's just a bit for me for personal use and the rest needs to be used up somehow. I usually freeze it in an ice cube tray (and then in a freezer bag) until I need a bit more, but this time I decided to upgrade my ice cubes and ended up with this ♡

Such a fun idea Audrey. These sort of remind me of the dipping dots ice cream but only better. I like that they are bigger than these pesky dots which always seemed to leave a tell tail trail in their wake. Plus it makes it so much easier to practice portion control. . .or to pop a couple every time I pass the fridge. ?

Hi Jessica. It will work with other milks, but the flavor and texture will be different. Coconut milk is a bit richer and has a particular flavor, lending to something closer to "ice cream" in taste and texture. Other milks I imagine would make the recipe a tad more "icy" but I'd still totally do it if it were me and that's all I could have :) I think the closest substitute is cashew milk (that's not strained) for maximum creaminess, but I'm getting the sense that you're not into nuts based on your milk suggestions... so in that case I'd go with soy first out of the two options you provided.
