With summer just around the corner, I'm pulling out another oldie nice cream recipe from the archives -- an instant raw and fruit-sweetened ice cream made with just 3 ingredients: banana, blood orange, and a handful of blackberries. It's such a refreshing and pretty summer combo and makes a great breakfast, a quick snack, or a frozen dessert for one.
If blood oranges aren't in season or aren't available where you are, use a regular orange -- it'll be just as delicious, though sadly not as pretty-in-pink...
This recipe makes a tiny serving -- double for a breakfast bowl and for easier blending, if you prefer (more fruit blends better than less fruit in a nice cream usually, since the blender needs more volume to catch the contents better). Also, if you want yellow and pink swirls, blend the bananas only first, scoop some of the mixture out into your bowl, then add the orange and blend once more. Add to the bowl and swirl for instant visual gratification :)

Ingredients
- 2 frozen bananas
- 1 tiny blood orange (or ⅓ - ½ of a regular sized one)
- a handful of blackberries
Instructions
- Blend all ingredients in a high power blender into an ice cream consistency (Add a slash of non-dairy milk if not using a power blender for easier blending). Top with blackberries and enjoy!

Of course I want the swirls!! It looks so much more impressive on IG that way, not that my stomach really cares :D This is a lovely trio of fruits I've never tried together!
