    Pumpkin Spice Breakfast Porridge {Free from gluten, dairy, oils, & refined sugars}. Like having pumpkin spice dessert for breakfast, but heartily and wholesomely ♥

    Move over every backlogged recipe I had lined up to be shared on the blog... This pumpkin spice breakfast porridge happened and I just had to make room for it straight away. I normally save simple things like this for my IG page, but this was so yummy it needed its own space...

    I've been seeing quite a few pumpkin spice-themed breakfasts lately and have been hankering to try some, but it just hasn't been porridge kind of weather around here until last week, and with the first chilly autumn day, pumpkin spice porridge it was! And now I'm regretting not making this earlier -- it's sooo delicious and so simple. Like having pumpkin cake or scone for breakfast, but way quicker and so warming and nourishing too... A sneaky way to have dessert for breakfast healthily ;) and get your pumpkin spice fix at the same time... and get some veggies into breakfast (a rare occurrence over here... :P )

    It's also a nice way to use up any unused pumpkin puree you may have leftover from other pumpkiny baking... ;)

    A simple, cozy gluten-free vegan breakfast porridge with spiced pumpkin for chilly autumn mornings.

    Ingredients

    • ¼ cup uncooked creamy buckwheat or creamy rice porridge (or porridge grain of choice)
    • 1¼ cups water for cooking
    • 1 tbsp raisins
    • ¼ cup pumpkin puree
    • 1 tbsp maple syrup
    • ¼ tsp pumpkin spice*
    • ¼ tsp cinnamon
    • dash of salt
    • splash of non-dairy milk (I used unsweetened vanilla almond milk)

    Toppings:

    • 1 tbsp more maple syrup
    • handful chopped pecans & pumpkin seeds (or any other favorite toppings like other nuts / seeds / dried berries / chocolate chips, etc.)
    • drizzle of unsulphured blackstrap molasses

    Instructions

    1. Bring water to a boil in a small saucepan. Add in the porridge grain (and raisins, if using) and cook for 10-12 minutes or according to instructions on package (time will vary depending on the grain you use), stirring occasionally.
    2. In the last 2 minutes of cooking, add in all remaining porridge ingredients and stir to combine. Allow to cook for the remaining few minutes to make sure everything is warned through. Add a splash of milk as needed to get it to your favorite consistency (I added maybe 1-2 tablespoon to mine).
    3. When done cooking, transfer into into a bowl. Sprinkle with nuts and seeds and toppings of choice. Top with 1 tablespoon maple syrup and a drizzle of molasses. Enjoy warm!

    Notes

    *If you can't find pumpkin spice, just use ⅛ teaspoon cinnamon, dash of nutmeg, dash of allspice, and a dash of cloves instead.

      Made it this morning after seeing your video :) And it was delicious. Thanks for the idea. I have so much pumpkin on hand, and have been doing so much baking with pumpkin, but I never thought to make a breakfast out of it. I made it with the creamy rice porridge as that's what I had on hand and it worked great.

        Thanks Brandi. You can use oatmeal to dress this up same way too :) I'm usually not that fancy with my porridge, but this was worth a shot and it came out delicious. And I can't believe it's still hot where you are. You know I've got the wood stove going already! It's freezing over here this week.

        So someone from Australia enlightened me today that it's pumpkin season over at your end of the world too this time of year. It sort of baffled me for a moment to think of pumpkin season in spring :)

        Molasses is one of those ingredients that really grew on me over the years. I love it paired with chocolate, or warm fall and winter flavors -- like chai, cinnamon, pumpkin, apples, etc. So good. You should pick some up -- I'm sure you'll have fun with it :)

      I totally do that too, get really excited about a new recipe and just forget about ones already waiting in line. And I am very glad you did this time because this goodness needed to be shared immediately!!!!! So creamy and easy and the molasses drizzle was a perfect finishing touch <3 I've been contemplating a recipe with pumpkin and raisins because I feel like they would be great together but you don't seem them paired up to often. You've convinced me though :)

        Thanks Harriet. I was just on a very long drive today and seeing all the colors in nature change so drastically in just days amazed me -- everything is golden, and red, and so beautiful. And the air is getting so crisp. The winds were howling today. Fall is definitely here and it's no wonder I've been craving these warmer breakfasts and meals all of a sudden.       Audrey you know how much I love porridge and I love pumpkin so this is like heaven to me. The ultimate comfort food. I have a similar recipe on the blog using a pear and kabocha puree so I can imagine exactly how this will taste...just heavenly and definitely deserves its own space, so good call on that. xo
