Nice cream. Nana ice cream. Banana ice cream. Instant ice cream... One of my absolute favorite treats in the world. I don't think a day passes when I don't have nice cream in some form. Even when it's -35C outside, I still manage to sneak it in -- even if it means snuggling with a bowl of ice cream by the fire place. So I decided to share some of the variations I enjoy it in here as well, starting with this super simple strawberry banana ice cream.
Why am I loving nice cream so much? Well it's super easy for starters. It makes a wonderful fruity breakfast bowl, a vehicle for all kinds of fun flavor experiments and improvising... It's light & raw, and so requires no waiting over a stove (I like porridge too, but nice cream typically wins for that reason). And it's like having dessert for breakfast (or a snack), only entirely wholesomely. And really, it's just plain delicious. Adn who would complain about an easy peasy instant strawberry banana ice cream - Vitamix edition, right? ;)

Super simple, instant strawberry banana vegan ice cream that can be made in your blender.

Ingredients
Ice Cream Base:
- 2 frozen bananas
- 1 cup frozen strawberries
- ¼ tsp raw ground vanilla (or 1 tsp pure vanilla extract)
Toppings:
- Fresh sliced strawberries
- cacao nibs
Instructions
- Blend all ingredients in a power blender into an ice cream consistency (use your tamper if using a Vitamix to help you along. If you don't have a power blender, use a food processor instead). Spoon into a bowl, sprinkle with toppings & enjoy!

Why does the banana and strawberries have to be frozen. Can't you just freeze the ice cream after you have made it?

Hi Janet,
You can try that, but you'll end up with a slightly "icy" and popsicle-like consistency. Blending the frozen fruit and enjoying right away gives this dessert the closest texture to "ice cream."

Vanilla powder is one of my favorite little ingredients. After working with it, it's really hard to go back to using the extract without tasting the alcohol...:S
