There's nothing I love more than a super simple yet impressive-looking recipe, and these little balls of cuteness are actually a festive variation of one of my easiest and most favorite recipes on the blog to date -- these raw coconut snowballs.
These candy cane snowballs can be made and ready within minutes, are easy and fun to make with kids, and make a scrumptious quick treat, a holiday table dessert, or a lovely gift.
Think Raffaellos, but healthier ;)
Note: this recipe is from before I went totally refined sugar-free.
Candy Cane Snowballs
- Prep Time: 10 mins
- Cook Time: 10 mins
- Total Time: 20 minutes
- Yield: 11 balls
Ingredients
- 6 candy canes
- ½ cup shredded coconut for rolling
- 1 cup coconut butter {also called coconut manna}
- 1 cup more unsweetened shredded coconut
- 2-3 tablespoon maple syrup {or liquid sweetener of choice}
- 2 tsp pure vanilla extract
Instructions
- Process candy canes in a food processor into a fine crumble {a few larger bits here and there are ok -- the consistency is up to you: if you want more crunch in your balls, grind the mixture a little coarser; or grind into dust for pretty candy cane flecks}. Remove about a third of the candy cane crumble and mix with the ½ cup shredded coconut for rolling. Spread on a plate and set aside.
- Add all other ingredients {except the shredded coconut and the candy cane crumble reserved for rolling} into the food processor and process until everything is combined and the mixture begins to form a ball.
- Form bite sized balls out of the dough by shaping and rolling them with your hands {they may seem a little moist while rolling, but that's ok -- they will dry up instantly once coated}, and then give them a roll on the shredded coconut and candy cane plate to coat them.
- Serve/eat right away or refrigerate for a few minutes to make them slightly firmer. They can be made ahead too and store well in the fridge {or can be frozen}. Enjoy!
