  1. Process candy canes in a food processor into a fine crumble {a few larger bits here and there are ok -- the consistency is up to you: if you want more crunch in your balls, grind the mixture a little coarser; or grind into dust for pretty candy cane flecks}. Remove about a third of the candy cane crumble and mix with the 1/2 cup shredded coconut for rolling. Spread on a plate and set aside.
  2. Add all other ingredients {except the shredded coconut and the candy cane crumble reserved for rolling} into the food processor and process until everything is combined and the mixture begins to form a ball.
  3. Form bite sized balls out of the dough by shaping and rolling them with your hands {they may seem a little moist while rolling, but that's ok -- they will dry up instantly once coated}, and then give them a roll on the shredded coconut and candy cane plate to coat them.
  4. Serve/eat right away or refrigerate for a few minutes to make them slightly firmer. They can be made ahead too and store well in the fridge {or can be frozen}. Enjoy!
