So if you know me by now, you know that the occasional vegan marshmallow treat just has to happen (If you haven't tried this Gluten-Free Vegan Peanut Butter and Marshmallow Tart yet, you're not my friend. Just kidding. But seriously, you have to try it sometime ;) ).
Shameful confession # 1: I always aim for healthy and wholesome (and refined sugar-free) desserts these days, but marshmallows are my weakness and having mini Dandies in my cupboard doesn't help ;) . So this weekend I've been enjoying this gluten-free vegan 2 minute mug blondie recipe, made with peanut butter, mini marshmallows, and some non-dairy chocolate chunks (naturally!).
Shameful confession # 2: I'm an anti-microwave person. I never use it to heat up my food. I'm always on my husband's case for using it. I can't wait till the thing dies and we don't have to replace it. But I have to admit the appeal of a dessert ready in 2 minutes has been very intriguing for a while now and I've been resisting it as long as I could. I meant to make some pb and marshmallow cookie bars this weekend but realized last minute that I didn't have enough peanut butter for my recipe... What's a girl craving a peanut butter and marshmallow dessert to do? That's how I ended up toying around with this microwave mug blondie recipe, and gosh did it turn out good! :) . It took a few (yummy) tries and I'm here to share my results with you ;) . This is a perfect recipe for a dessert in a jiffy (I mean it literally took less than 5 minutes from start to finish), or a treat for an unexpected visitor, or a way to make just enough of an indulgent dessert without having to be stuck with all the tempting leftovers.
I'm not sure why I feel compelled to share this microwave stuff with you all, but it came out so there you have it. If you're an absolute anti-microwave person, this recipe works well as a bake as well (I actually adjusted it from a baked cookie bar recipe I make sometimes) -- just put it in a small oven safe ramekin and bake it at 350F for 15 - 20 minutes until golden brown. It won't be a 2 minute mug brownie, but it will be delicious!
Gluten-Free Vegan 2 Minute Mug Blondie
An instant peanut butter, chocolate and marshamllow blondie recipe that you can make in 2 minutes in the microwave. Gooey, delish dessert in a hurry. Vegan recipe.

Ingredients
Blondie Ingredients:
- 3 tbsp smooth peanut butter
- 1 ½ tbsp brown rice flour
- 2 tsp tapioca, potato, or arrowroot starch
- ¼ tsp baking powder
- ¼ tsp pure vanilla extract
- 1 ½ tbsp maple syrup
- 1 ½ tbsp non-dairy milk (I used unsweetened almond milk)
- 1 handful vegan mini marshmallows
- 1 handful vegan chocolate chunks (or chocolate chips)
Topping Ingredients {optional}:
- 1 handful vegan mini marshmallows
- 1 handful vegan chocolate chunks (or chocolate chips)
Instructions
- Place all blondie ingredients except mini marshmallows and chocolate chunks in a microwave safe mug. Stir well to thoroughly mix the ingredients together into a uniform mixture. Fold in a handful of mini marshmallows and chocolate chunks.
- Microwave on high for 30 seconds. Remove from the microwave for a second and then microwave again for another 30 seconds. Repeat the process once more. Watch that the contents don’t rise too much and jump over the rim — if you see that happening, pause, remove from microwave for a few seconds and then place back for a shorter interval.
- If adding additional topping marshmallows and chocolate chunks (highly recommended), then simply sprinkle those on top and microwave in a similar fashion in 15 second bursts (removing the mug out of the microwave in between each burst), until the chocolate chunks have melted a bit. Alternatively, you can torch the topping if you have access to a baking torch to get those marshmallows nice and toasted! Enjoy straight away (or reheat later).

I started making this mugcake so often that I got lazy and I simplified it haha! I usually use 6 tbsp peanut butter, 3 tbsp maple syrup, 3 tbsp almond milk and 4 tbsp of gluten free flour mix. Then I add chocolate chips freely!
Also I saved the recipe in my phone as 'Best mug cake' ;)
