    Blueberry Basil Nice Cream

    It's summertime, and while it's not quite blueberry season around here just yet, that sticky hot quick-where's-the-nicecream feeling is in the air -- which means those blueberries are just around the corner! Blueberries and basil have always been one of my all-time favorite flavor pairings (well basil + fruit in general, to be honest), so it's not surprising this combo made its way into my nice creams as well last year.

    Blueberry Basil Nice Cream (Dairy-Free, Fruit-Sweetened, Raw)

    This little treat is super easy to make, and you end up with a delicious, fruit-sweetened, raw instant ice cream. It makes a beautiful breakfast, snack, or dessert -- basically, the stuff daily routines are made of :)

    Ingredients

    • 2 frozen ripe bananas
    • 1 cup blueberries
    • a small handful of fresh basil leaves
    • optional: a teaspoon of maple syrup if your blueberries are not very sweet

    Instructions

    1. Blend all ingredients together in a power blender into an ice cream consistency and enjoy! (Use the tamper if your blender comes with one to help with blending).

      Followed the recipe and the basil really elevated the nice cream! My nice cream though came out a very very dark purple and icy, even though i stirred it every 40min while it was freezing. It also turned liquidy really quickly - would u have any tips on making it creamier and less icy? Thank you!

        Hi Elle, I'm so glad you enjoyed the flavors :)

        You don't need to freeze this nice cream (as that will indeed make things icy). It's meant to be blended into a soft scoopable ice cream consistency and eaten right away. You can use frozen blueberries to make it even firmer if you prefer.

        The color might just have to do with the blueberry variety and amount used. In the photo above the color on the bottom is more blueberry rich for instance, whereas for the scoop above I used a bit less so it's lighter.
