It’s best to begin with soft dates - with the pits! By pitting the dates yourself, the fruits will yield a softer texture. Then, simply spoon or pipe nut butter into the center of the dates. I’m partial to raw almond butter, but you can use whatever nut, seed, or peanut butter you like.
Take this perfectly scrumptious snack to the next level by adding cacao nibs for a little touch of chocolatey crunch. A sprinkle of flaky Maldon salt balances out the sweetness of the dried fruit, making these almond butter stuffed dates something special.

Ingredients
8 medjool dates, with pits
¼ cup almond butter*
2 Tbsp cacao nibs**
½ tsp flaky salt (Maldon Salt; optional)
Instructions
- Cut the dates halfway through, lengthwise, and remove the pits.
- Spoon or pipe almond butter into the center of the dates.
- Top with cacao nibs.
- Sprinkle with Maldon salt and enjoy!
Store extras in an airtight container in the refrigerator for up to 5 days.

* Feel free to sub any nut butter, peanut butter, seed butter you like!
