    Almond Butter Stuffed Dates

    Soft dates filled with almond butter, sprinkled with crunchy cacao nibs, and topped with flaky salt are the perfect midday pick-me-up! These raw treats are a breeze to assemble and a delightful, energizing snack. And honestly, if you're in the mood for easy, you can't go wrong with stuffed dates.

    I started making these little babies while producing videos for the blog. Behind the scenes, my kitchen and dining room were transformed during production days and left little room for food prep…aside from the star recipe of the day.

    Using pantry staples, I put these four ingredients together in just a few minutes. It still amazes me how satisfying these nourishing bites are in the middle of a project! Making these always feels like doing something special for myself. When I'm feeling generous, I might even share a few.

    It’s best to begin with soft dates - with the pits! By pitting the dates yourself, the fruits will yield a softer texture. Then, simply spoon or pipe nut butter into the center of the dates. I’m partial to raw almond butter, but you can use whatever nut, seed, or peanut butter you like.

    Take this perfectly scrumptious snack to the next level by adding cacao nibs for a little touch of chocolatey crunch. A sprinkle of flaky Maldon salt balances out the sweetness of the dried fruit, making these almond butter stuffed dates something special.

    Ingredients

    8 medjool dates, with pits

    ¼ cup almond butter*

    2 Tbsp cacao nibs**

    ½ tsp flaky salt (Maldon Salt; optional)

    Instructions

    1. Cut the dates halfway through, lengthwise, and remove the pits.
    2. Spoon or pipe almond butter into the center of the dates.
    3. Top with cacao nibs.
    4. Sprinkle with Maldon salt and enjoy!

    Store extras in an airtight container in the refrigerator for up to 5 days.

    Notes

    * Feel free to sub any nut butter, peanut butter, seed butter you like!

    ** Swap with mini chocolate chips, shredded coconut, or your favorite addition!
