This gluten-free and vegan garlic scape pesto is an easy and flavorful way to use up lots of garlic scapes.

Ingredients

  • 390gr garlic scapes, rough chopped (just over ~5 cups)
  • 1 cup pine nuts
  • 1 cup nutritional yeast
  • 1 cup walnut oil
  • 1/4 cup fresh garden herbs of your choice (I used a mix of basil, oregano, chives, lovage, and thyme)
  • 3 tbsp white miso (I used Hikari Miso)
  • juice of 1 lime
  • 2 tsp salt, or more to taste

Instructions

  1. Process all ingredients in a food processor into a well-combined pesto consistency.
  2. Taste and adjust flavors to your liking (i.e. add more salt, lime, miso, tamari, spices, etc. and process again to combine).
  3. Transfer to glass jars for storage. Use fresh, or store in the fridge. A little goes a long way ;)
