Description

Light, creamy vegan pops that combine the beautiful, unusual flavors of tahini and blueberry. Gorgeous purple color. Naturally gluten-free and refined sugar-free.


Ingredients

  • 1 ½ cups unsweetened almond milk (or use a nut-free plant milk substitute, like coconut, rice, soy, or oat milk)
  • ½ cup blueberry jam (I used a fruit sweetened version, or can make your own refined sugar-free — see notes above recipe for tips)
  • 2 tbsp hulled tahini
  • ½ tsp salt
  • ⅛ tsp raw ground vanilla bean (or a bit of a vanilla bean pod, or pure vanilla extract if you can’t find the other options).

Instructions

  1. Blend all ingredients in a blender until smooth. Pour into your popsicle mold and freeze overnight or at least 5-6 hours to set. Enjoy!
